About Malmö Chokladfabrik

Malmö, the City of Chocolate 1888

At the end of the 19th century, Malmö was home to many chocolatiers. In 1888, Emil Nissen founded his own factory, "Malmö Choklad & Konfektfabriks AB." Emil later changed the company name to "Mazetti," producing masterpieces like "Egon Cacao" and "Dumle," and leaving his mark on Swedish chocolate history.

Today, the tradition of Malmö, the city of chocolate, is carried on by Malmö Chokladfabrik. We preserve the Mazetti family's recipes, and our award-winning packaging design is a homage to the brick buildings and striped chimneys of the former factory. We believe Emil would have approved.

100% Organic Ingredients

Our chocolate is made exclusively from 100% organic ingredients. We never use palm oil.

We ensure that cocoa farmers work under fair conditions, and we use Fairtrade certified cocoa and cane sugar whenever possible. At the same time, we aim to minimize our climate impact and contribute to a sustainable society—both here in Sweden and in the countries where cocoa farmers live.

From Cocoa Fruit to Roasted Beans

Once the cocoa pods ripen, the beans are extracted, fermented, sun-dried, and then roasted.

At Malmö Chokladfabrik, we roast the beans for our limited "Tegel Series" bean-to-bar chocolates ourselves. For our other chocolates, we use organic roasted cocoa mass sourced from carefully selected suppliers.

Proud Chocolate Craftsmanship

After roasting, the beans are called "cocoa nibs." These nibs are put into a conche (a refining machine) and ground with organic cane sugar to create chocolate liquor. A small amount of organic cocoa butter is added to achieve a smooth melt and ideal texture.

Next is tempering—the process that gives chocolate its beautiful sheen, aroma, and crisp texture. Finally, it is poured into molds, cooled, and then packaged.

Pure Chocolate, No Unnecessary Additives

Dark chocolate is naturally vegan. We do not use nuts, gluten, or soy, making our dark chocolate enjoyable for those with allergies.

The only caveat is dairy. Since we produce milk chocolate in the same factory as dark chocolate, even if no traces of dairy are detected in dark chocolate, we cannot guarantee it is completely dairy-free. Nevertheless, it is generally fine and can be enjoyed with confidence by most chocolate lovers.

CHOCOLATE MASTER

Joel is a widely known figure, especially among chocolate lovers. In 2014, he won the TV show "Dessert Masters." The following year, he published his book "Dessert Revolution."

A long-time regular at Malmö Chokladfabrik, he now works as a chocolatier at our factory, where he is responsible for the "Makers" series. His rich experience—seven years running his own "Matt & Chocolat Stazion" and his tenure as Executive Pastry Chef at Malmö Live—is now being brought to our customers.
